Wouldn't it be easier to reintroduce one thing in each of those groups at a time - trying to find the INDIVIDUAL culprits? When I went on a gluten free diet I lost tons of weight, but I think I was restricting carb intake too much. I was actually eating more, but more of meats, vegetables, protein, etc. I was still losing weight. I don't eat a lot of carbs, but I do need to eat some, otherwise I would weigh close to nothing! I eat sweet potatoes, rice, rice cakes, corn tortillas, gluten free granola (which is brown rice and flax), gluten free pizza, etc. for my carb intake. I hope this doesnt sound rude, but what CAN you eat? im doing the oxalate diet and i feel a lot better, but i get really frustrated sometimes b/c i feel like im not eating enough variety. Im not that fond of vegetables, and ive started craving them!! Thats defintely never happened before.
