It makes wheatberry bread and the flax, 100% whole wheat and the whole berry makes the bread very dense and VERY high fiber... so it's metabolized slower by the body and low glycemic. I can eat a slice and do great... especially if I have a protein with it. But most of the time I don't have time to bake bread anymore... unfortunately. But I love how it tastes and smells... Lately I have been eating Sara Lee 100% whole wheat slices. They are very hearty and 100% whole wheat... which is very different than whole wheat. I do fine with this too. If I am going to have a sandwich though, I eat the low-carb bread to make sure I do okay. Two pieces of the heavier bread makes a rise in my blood sugar. Do people use Splenda for breadmaking? Does it work okay with the yeast? I'm having difficulty with breakfast - I have to eat it on the road (don't ask, long explanation). I tried a few different meal replacement bars (like Atkins, Slim Fast etc.) but they are very expensive 5 days a week and also they give me intestinal problems that make the work-day even worse than it already is I want to make some whole wheat bread so I can have a pb sandwich on the way to work. I figure if I make it myself (especially if I can use Splenda) it will be better for me than store-bought bread.
