Hi Jayd,

I make my whole wheat bread using honey (i've never tried it with Splenda).

One slice of this does not affect my bg's. In fact, I get lower readings with

this than I do with the low carb bread.

I make mine with honey too and add flax seed and steam some whole wheat

kernals beforehand and add steam whole wheat to my bread... about 3/4 of a cup.

It

makes wheatberry bread and the flax, 100% whole wheat and the whole berry

makes the bread very dense and VERY high fiber... so it's metabolized slower by

the body and low glycemic. I can eat a slice and do great... especially if I

have a protein with it.

But most of the time I don't have time to bake bread anymore...

unfortunately. But I love how it tastes and smells...

Lately I have been eating Sara Lee 100% whole wheat slices. They are very

hearty and 100% whole wheat... which is very different than whole wheat. I do

fine with this too. If I am going to have a sandwich though, I eat the

low-carb bread to make sure I do okay. Two pieces of the heavier bread makes a

rise

in my blood sugar.

I'm sorry to ask something that I know has been discussed before, but

when I tried to search the archive I got tons of hits for " bread " .

Do people use Splenda for breadmaking? Does it work okay with the

yeast?

I'm having difficulty with breakfast - I have to eat it on the road

(don't ask, long explanation). I tried a few different meal

replacement bars (like Atkins, Slim Fast etc.) but they are very

expensive 5 days a week and also they give me intestinal problems

that make the work-day even worse than it already is :)

I want to make some whole wheat bread so I can have a pb sandwich on

the way to work. I figure if I make it myself (especially if I can

use Splenda) it will be better for me than store-bought bread.
