I have lots of blackberries in my yard so I am planning on making

blackberry jam or jelly with it. Does anyone know if you can use

Splenda when making it?

Hi Mindy

Bernardin has a special kind of pectin that allows you to make jams and

jellies using splenda. The normal pectin doesn't work because it requires

sugar to do it's thing. Look around in some of the larger food stores and

I'm sure you'll find it. It's called " No Sugar Needed Pectin " from

Bernardin as I said above. I tried it and while the jam is a little tart

it's very good. (I did raspberry). I might add more splenda the next time

to make it sweeter.

Contact your county agricultural extension office and ask to speak to the home

economist.
