I had been vegetarian (doing a little fish and poultry now) and was lost without my beans and legumes. lol From what I understand, this is about molecular mimicry - the proteins in those foods are so similar to the myelin sheath proteins that setting off the immune reaction will cause the lymphocytes to attack anything similar (including the myelin). I can tell you this...I had a major incident about 3 months into the BBD...the only time I knowingly strayed. I splurged on a gluten-free, casein-free pizza with soy cheese. A little soy won't hurt, right? That was on a Tues. evening. I was fine on Wed., fine on Thurs morning, took a nap later in the day and woke up barely able to walk. I stumbled around like a zombie the rest of the day. The next day is when I started noticing the changes in vision in my right eye. I had optic neuritis in the other eye a year ago that has not fully recovered, so I was definitely freaking out. The acuity seems to be o.k. now (I did several acupuncture sessions and supplements), but I have problems with glare and bright light. I will never touch soy again!!! I eat Japanese food at home which is pretty difficult without soy sauce but if you use enough wasabi, it isn't so bad. Cutting out all legumes really has made a big difference for me and I won't go back to eating them.
