The stitch would go through both sides of the incision and be tied into a knot, then the ends cut. The opposite would be " continuous " --the stitches are in a series and the suture material is not cut. There is a good illustration of continuous, pursestring, mattress, and interrupted sutures on p. 1738 in Stedman's 27th. P. 1740 in Dorland's 29th has excellent drawings of several different stitches with both interrupted and continuous versions.
