" Especially goats' I would cook always before yoghurt fermentation.... You need to get rid of bacteria you don't want. Raw milk is not even easy to buy - usually it's pasteurized at the farm. Dr.Mercola has a lot to say about raw milk. I haven't looked into it. Goat milk should not be heated past 180 degrees...... after that, the proteins get damaged. But, you really do have to do this..... especially when starting with raw milk. Sorry.
