My kids like to eat them with salt and pepper right out of the

skins. (Cut in half, remove the seed.)

Other yummy ideas...

Avocado chicken salad (on the top of my list...mmm)

veggie pizzas

Avocado meat loaf

Guacamole as a dip for meats (and later for raw veggies)

You can use it instead of mayo on sandwiches (which I make

using pancakes for the bread).

" I bought some pecans, but what recipies do you use this in? "

You can put the pecans in your food processor and grind them

up and use them in any recipe that calls for nut butter/flour. Many

ASD kids tolerate pecans much better than almonds (high in

phenols)... thus the name " pecan " bread.

And about cucumbers, I have never cooked them. I don't like

cukes. I am not much help there. I have cooked lots of zucchini

in different ways and they are pretty tasty.

Yes, you can peel, deseed and boil cucumbers, in stage 2 you only eat

cooked vegetables. I buy the little pickling cucumbers, and they

don't have seeds.

I used to make a really good sidedish that just had cucumbers, blue

cheese and a little bit of butter. I bet this can be addapted to

SCD!!!

They are not very tasty but make a great gazpacho (blended with

tomatoes, onion and bell peppers)

About avocado, my new FAVORITE is green pudding (I believe from

pecanbread.com) - just mix a ripe banana and the avocado flesh in a

blender and add a little water if it is too think. My son hates

avocados but he really likes the green pudding. I think the recipe

may have some peanut butter too... look it up!!!!
