Hi Vicky,

You can add a little celery juice , maybe to cooked apple or pear sauce

.. the celery juice is a lime color , and you can even add a little lemon

juice for the tart taste.

Hi Vicki,

To make a lime popsicle I'd think you should be able to freeze some

homemade limeade in popsicle molds.

When I make lemonade I make it with honey (I melt the honey in a

little boiling water) and then add water and fresh squeezed lemon

juice*. I have also made the lemonade for my diabetic dad with

saccharine. I don't really have amounts because I sweeten to taste.

I also like to add club soda instead of water occasionally for a

nice refreshing summer drink.

To convert this to limeade you probably won't need quite as much

sweetener as limes are a little sweeter than lemons.

If it is not quite green enough with the lime juice a drop of green

food coloring mixed in should help. If you are not comfortable

using food coloring, the juice (the cook water) from cooked spinach

may help add color.

*I always have lemon and lime juice handy because I juice large

quantities at a time and freeze the juice in ice cube trays than

transfer to a freezer safe bag. If you keep it a long time you may

wish to double bag it for the freezer.

Kiwi fruit might help the green color, if he can tolerate that.
