I would remove them, allow the oven to cool down to just slightly warm and

then leave them or perhaps on a very low heat like 200º.

Well, of course I turned the oven off, Jody! And still, they fell,

maybe not as fast as they normally do, but just as deep!

However, doesn't care what they look like. I was only hoping

to fool my parents the next time they come ... they won't eat them

because they can tell from looking that they're " that special diet

food. " Nevermind -- there are a lot more important issues for us to

look at besides my sunken muffins! ;)

Fill the sunken portion with something exciting and pretend it is supposed

to be that way- berries, or nut butter and yogurt.(or a Chinese fortune paper:

Hi.

Last night, I baked a batch of FRUIT MUFFINS (24 mini-muffins and 1

regular-sized muffin) that turned out beautifully. I found the recipe

on the pecanbread website. This recipe DID call for 2 eggs; in the

past, I've made SCD muffins without eggs and experienced the

falling-muffin syndrome.
