However, doesn't care what they look like. I was only hoping to fool my parents the next time they come ... they won't eat them because they can tell from looking that they're " that special diet food. Guest guest Posted April 22, 2004 Report Share Posted April 22, 2004 Hi. Last night, I baked a batch of FRUIT MUFFINS (24 mini-muffins and 1 regular-sized muffin) that turned out beautifully. I found the recipe on the pecanbread website. This recipe DID call for 2 eggs; in the past, I've made SCD muffins without eggs and experienced the falling-muffin syndrome.
