Guest guest Posted September 26, 2004 Report Share Posted September 26, 2004 Greetings. I've just started the SBD, but I've been on a controlled- carb (not low-carb) plan for 5+ years. I have not used any type of sugar substitute in over 4 years, and I have no plans to start using them at all. Not even Splenda :-). In the WOE that I've been following, I don't eat refined sugar, but I can eat small amounts of honey & pure maple syrup as part of a balanced meal containing protein, vegetables & carbs. I don't eat them every day, but they're allowed. I realize that on SBD, even in phase 2 honey is listed as " avoid or eat rarely, " which is fine with me and I will comply with it. Does anyone have ideas for dessert-type foods that are truly sugar- & sweetener-free? I can think of ricotta or yogurt w/nuts mixed in, and in phase 2 I could add chopped apricots or other fruit, but that's the end of my inspiration! Diet Jell-O and puddings are out, of course. My Dr. says no long term studies have been done on it because it is a plant, just as other foods are, but that it is safe. FDA has not approved it for food additive because, their website explains, it has no long term studies. Stevia is not an altered molecule. It can be used to sweeten beverages or ricotta or whatever. Guest guest Posted September 27, 2004 Report Share Posted September 27, 2004 IIRC honey is now considered OK in small quantities as long as it's part of another food e.g. salad dressing. Anyone? I use a maple syrup substitute that uses concentrated white grape juice for sweetening. Thy syrup lists sugar in the ingredients - from the fruit - but it's a very small quantity. I've heard of concentrated apple juice being used the same way. I recently tried 1/2 cup pureed dates (yeah I know, dates are a " use rarely " ) as a substitute for molasses in a recipe for a dutch pumpernickel. Excellent flavour and with 3 cups of ww flour/7 grain cereal in the recipe it significantly reduced the sugar content. IMHO - careful use of these " natural " sweeteners can give us the sweetening we need for some dishes. No doubt it's not a good idea for everyone but the odd use when one is well into Phase 2 should be considered acceptable. I applaud your efforts to reduce artificial sweeteners. I'm sure a lot of us would be better off either not using them or reducing the amount we use. > Greetings.
