I also make a sugar free straberry pie, it's so good and easy. I buy

one of those frozen Pet-Ritz (?) pie shells, bake it, let it cool.

Add sliced fresh strawberries, and sugar free strawberry gel (most

grocery stores carry this in the fruit section), and top it off with

Rediwhip. Yum!

Sounds good. I like the cold fruit pies very much (non baked). Ever

notice that most cafaterias that have a sugar free pie - it is

apple. I like applie pie less than nearly any thing else. Too much

crust for me. If I am going to be eating crust I much prefer a peach

cobbler. Can make it sugar free too, use Spenda or leave out the

sugar completly if the peaches are fresh and sweet. Oooooh, makes me

drool for the City peaches. Have to find a reason to go up

that way in May. Very sweet peaches.

All this talk about pie - glad we have some left for this evening.

See, I'm a crust person, the more the better! But, I find the

strawberry more light and refreshing and it's much better in the

summer.

In the fall, I do like my apple and peach pie. I have a sugar-free

version of both with homemade crust. If anyone is interested, I can

post the recipe.
