The barley and rice would have lots of fiber, and the lentils have lots

of protein.

Mixed carbs lead to lower than expeced BG

Loaded rice steamer with one part brown rice, one part barley, one part

lentils and 12 parts water. Had about a cup of the stuff with dinner as

the

main carb course.

I didn't use any seasonings. When using this mix over the course of a

week, I would often toss some garlic (OK, four or five cloves, I like

garlic) into the saucepan, and perhaps dried rosemary or basil. One day I

felt bored and experimental, so I put the usual one cup worth in a ramekin,

added four sliced mushrooms and (of course) some chopped garlic, topped it

with ricotta cheese mixed with ground red pepper and left it in the oven for

15 minutes at 350 degrees. Next time, it's staying for half an hour or more.

I guess it was in the cooker for 40 or 45 minutes (I made a lot in one of

those turn it on and the light goes off when it's done cookers). Stovetop

time? I wouldn't presume to guess, except that you might want to let barley

go for 45 minutes, then add the rice and lentils about ten minutes after you

start the barley. I didn't soak the lentils -- you may want to do that if

you're doing this in a saucepan (or pasta pot if you're prepping for a big

lawn party).

I find it helpful when people are talking about food they're testing

if I could know whether the person is using oral meds, insulin, or

just diet and exercise. The three methods often lead to different

results food wise, and someone who is on oral meds will probably be a

closer match to what my results might be than someone using insulin,

etc.
