Guest guest Posted December 9, 2004 Report Share Posted December 9, 2004 Start all recipes with a fresh head of cauliflower. Rinse and cut into florettes and boil in salted water until tender. Drain in a colander and mash lightly while still in colander to get rid of excess water. Then return to pan and mash with S & P to taste, ICBINB spray and a bit of Fat free 1/2 and 1/2 (if you choose) then add one of the following " add ins " " Cheesy mashies " Prepare a head of cauliflower as noted above. Add 1/2 cup of lowfat shredded cheddar cheese; stir, cover and let it sit for a few minutes until cheese is melted and serve. " Carmelized Onion and Cheesy potatoes " Prepare a head of cauliflower. Meanwhile in a skillet add some olive oil and 2 medium chopped onions and cook until onions are a deep golden brown. Add to prepared cauliflower, add 1/2 cup lowfat cheddar cheese and stir. Cover until cheese is melted. (This is my alltime favorite way!) Garlic and Herb " Potatoes " prepare a head of cauliflower potatoes.
