I would think it will keep until the use by date, but make sure you keep it airtight. Air is what helps bacteria grow. Just watch it closely and if it smells weird throw it out. I did the same thing with Ricotta, I went to Gordon's Food Service and bought a 5 lb tub. LOL

Thanks, . I'll use the nose-test! It already tastes a little bit

weird but I do like it. I think it's an acquired taste. Heck I'm

eating Garbanzo beans in my salad now as I type. 6 months ago I

wouldn't have even touched them!

Thanks. I hated to throw it away but wasn't sure if it would stay

after it has been open.
