If you like to try ethnic foods, you might like it too: I made Indian Flatbread from my More with Less cookbook (recipe follows) and then spread 2 of them with hummus and added tomatoes and lettuce, folded in half and ate. Yum!! Betsy Indian Flatbread: Combine 2 cups WW flour, 1/2 tsp salt, 2 Tbsp olive oil. Add 3/4 cup water and add additional water as needed to make a kneadable dough; knead well. Cover and let sit for one hour; knead again. Divide into 12 balls. Roll each ball out into a circle (or some kind of blob--my rolling outs never end up circular) about 1/4 " thick or thinner if possible. Heat nonstick or iron skillet on med high; cook each bread about 1-2 minutes on each side, until browner and slightly puffed. I had to spray my pan with oil a few times between breads.
