More squash questions

Hi, thanks for the info about butternut squash. I now have 2 pepper

squash's on my cupboard I don't know what to do with. I bought

them for a table decoration at Thanksgiving and I feel guilty about

not using them. So, does anyone have any recipes I could use for

pepper squash.

I have a squash soup recipe I like that is for butternut squash but

likely would work with any squash. For butternut squash -

Bake at 350 30-40 minutes, until fully soft. Let cool and scrape

out soft squash.

In a soup pan saute onion and garlic to taste until soft (leeks are

also good) in 1 T olive oil. Add six cups of broth, vegetable,

chicken, beef, whatever. I use the low salt kind and then salt it

later myself. Simmer for half hour or so. Add the squash and mash

it in as best possible with a potato masher, wire whisk, whatever

works. Spice according to taste. I add seasoned salt, white pepper

and a little cayenne pepper, but you can make it a different soup by

adding ginger, rosemary, etc. It's kind of fun to experiment.

Simmer for another half hour. Then blend the entire thing either in

a blender or large food processor until it is the consistent of

split pea soup. Pour back in the pan. I serve it with a little

parmeson sprinkled on top.

Now, I am not sure what portion size on this should be since squash

is a starchy vegetable, but I imagine as a side dish a cup of this

every so often on a cold night won't be too bad an idea in phase 2.

Forgot to say to cut the squash in half, take the seeds out and bake

face down on a cookie sheet. Sorry.
