Guest guest Posted October 12, 2004 Report Share Posted October 12, 2004 Here you go Twana: Banana Muffins 1 1/2 cup ww flour 1 1/4 teas baking powder 1/4 cup oil 3/4 cup splenda 1/8 teas salt 1/2 teas cinnamon 1/2 teas soda 2 eggs or 1/2 cup egg substitute 1 cup mashed ripe bananas Mix together put in a sprayed with pam muffin tin bake 350 for 25 minutes. This recipe is for a loaf of bread, bake for 45 minutes. I just thought muffins would be good for on the run. Don't know if it makes more than 12 muffins as i made a double batch and made a loaf of bread after filling the muffin tins. It was dense but I thought it was good, don't know if you have to do something special when you sub ww flour for white flour (still new at this!) if anyone has adjustments go ahead. Guest guest Posted October 14, 2004 Report Share Posted October 14, 2004 also I made muffins and bread out the same banana bread recipe so the muffins have more of a harder outside then a softer inside (KWIM?) the bread is softer but my kids like the ease of a muffin. I like the bread better Ditto, I'd like to know as well. I just bought some WW flour also--used it in place of white bread crumbs in my salmon patties--turned out just fine.
