In Scotland, Ireland, Wales, etc. oatmeal refers to a coarsely ground (hominy) meal that's usually used in a porridge. Steel cut - think chopped - is a better option nutrient-wise to grinding. Indeed the Rolled Oats marketed by Quaker Oats are the " old fashioned i.e. cooked " oatmeal " mentioned in the book so as not to confuse it with " instant " oatmeal which is a no-no. As much as I like Quaker Oat - their head office is here in borough Canada - you can get Rolled Oats from other mills. I get mine - as well as my steel cut or ground oat, barley etc. from a local health/bulk food store. > My mom and I used to make the oatmeal pancakes. Stuffed Pancakes (Makes 10 pancakes) 4 ounces low fat cream cheese 1 1/2 teaspoons vanilla 1 Tablespoon (or little less) Splenda Blend (food processor, blender, stick blender, mixer) all three ingredients til light and fluffy. Set aside. 1-cup Old Fashion Quaker rolled oats 1-cup ricotta cheese 3 eggs 3 teaspoons vanilla 2 teaspoons (fresh grated) nutmeg 2 teaspoons cinnamon 1-tablespoon water 1 teaspoon Splenda (if needed) Non-stick cooking spray In a blender or food processor grind the oats, nutmeg, cinnamon, Splenda until fine flour consistency. Set aside. Blend ricotta cheese, vanilla, eggs, and water until smooth. Slowly add the flour to the liquid and a batter will form. Heat griddle, spray with non-stick spray and then cook batter the same as a any pancakes. To serve: Place a dollop of the cream cheese mixture between two pancakes press them down enough to spread the mixture to the edges then top with fresh fruit (strawberries are wonderful with this) or appropriate syrup.
