Speaking of lasagna, I made veggie lasagna, with organic whole wheat noodles, last night. I made the lasagna with a minimum of noodles, just enough to line the bottom of the pan, and then did the rest of the layers with sliced eggplant, spinach, sliced tomatoes, mushrooms, peppers, onion, garlic, fat free ricotta cheese and low-carb tomato sauce, topped off with part-skim mozzarella. A small square of that and a salad and I was very pleasantly full. The rest of the family liked it, too. Two hour post-prandial reading was 101. YMMV. I now know what I'm going to make this week-end. I'll bet it will warm-up great for lunches too! When you say a " small square " , just how much is that in inches?
