Speaking of lasagna, I made veggie lasagna, with organic whole wheat

noodles, last night. I made the lasagna with a minimum of noodles,

just enough to line the bottom of the pan, and then did the rest of

the layers with sliced eggplant, spinach, sliced tomatoes, mushrooms,

peppers, onion, garlic, fat free ricotta cheese and low-carb tomato

sauce, topped off with part-skim mozzarella. A small square of that

and a salad and I was very pleasantly full. The rest of the family

liked it, too. Two hour post-prandial reading was 101. YMMV.

Sounds great Christy. I now know what I'm going to make this week-end.

I'll bet it will warm-up great for lunches too!

When you say a " small square " , just how much is that in inches?

No, I just kind of make it up as I go along, and the ingredients vary

slightly according to what I have on hand.

Christy,

That's the way I cook too :-) In fact, when I do use a recipe, I

invariably alter it in some way.
