Guest guest Posted April 7, 2004 Report Posted April 7, 2004 Hi Topper and EveryOne, Wow you have to try this cake!!! It is fantastic:-)) Made it today, followed Topper's recipe, added nuts and raisins, and topped with grated coconut. Amazingly good aroma refreshed my kitchen and the taste of the cake is to die for....... Next time, I am going to try using Coconut Oil for the shortening, or at least part of it, and honey instead of sugar or maybe sugar and some molasses. Anyway this recipe is great! After sharing it with my family I hope to get a few pieces tucked away in the freezer:-)) Peace, Love and Harmony, Bev Thyroid-Adrenal Connection: Information and Resources http://www.bestweb.net/~om/thyroid Quote

Guest guest Posted April 10, 2004 Report Posted April 10, 2004 Hi, Topper! I made two of the cakes and served portions to friends who have a problem with constipation. All six of them reported " great results " a day later or so. The cake was pronounced to be " Great tasting and good for you! Who could ask for more than that? " , so you now have the approval of the BBSCC, Bonnie Baker Senior Citizens Club! Yes, I printed out the recipe on index cards and gave a copy of it to everyone who had a piece of the cake. I left the nuts out because so many of us have problems with Diverticulosis, but added both white and brown raisins. Marvelous! We all opted to " top " the cake with apple sauce and cinnamon. Guest guest Posted April 10, 2004 Report Posted April 10, 2004 Wonderful news to hear, Dianne.... I found the recipe during a search for more ways of using oatmeal and bananas other than plain ole muffins... this household is now unanimous for the Banana Oatmeal cupcakes.... They freeze great, BTW.... so you can make a batch and freeze them, then just eat one a day for medicinal purposes... I like them plain.. no nuts or raisins or topping... I think they taste great.. very moist... Without getting graphic.... they work so well for balancing the plumbing that it even reduces the amount of tissue needed... if you get my meaning... Guest guest Posted April 11, 2004 Report Posted April 11, 2004 Hi, Topper! I made a double batch of the recipe yesterday just so I could make cupcakes of this cake recipe. These things are wonderful when still warm out of the oven. Hmmm... Treat 'em like muffins and put real butter on them. To die for! Now I have them frozen and waiting for me in a bin in my freezer so I can grab one whenever I want to. I just put the raisins in there when I made the cake up for my friends. I do not need raisins to help me in that department, in fact, they make things worse. The fiber and bulk from the oatmeal and bananas has really slowed down my " Surgically Induced IBS " situation. My system is working just fine now! You are right about the tissue usage, too! Thanks again, dear friend! Dianne At 06:14 PM 4/10/04, you wrote: >Wonderful news to hear, Dianne.... Guest guest Posted April 11, 2004 Report Posted April 11, 2004 Here you go, Shirley. Straight from a text file on my desktop. Grease 9 X 13 baking pan Preheat oven to 350 Mix in large bowl with spoon: 1 1/2 cups mashed very ripe bananas (4 medium) 3/4 cup sugar 2/3 cup vegie oil (make sure not soy oil) 2/3 cup butter milk (can sub 1 tblsp wht vinegar plus regular milk to make 2/3 cup) 1 teaspoon vanilla 1 large egg Mix in: 1 1/3 cups flour 1 cup quick-cooking or regular oats (oatmeal) 2 tsp baking soda 1 1/2 teaspoons ground cinnamon 1 tsp baking powder 1/2 teaspoon ground cloves Optional to add (I didn't have these, so I skipped) 2/3 cups chopped nuts 2/3 cup raisins Pour batter in pan. Bake 30 to 35 minutes or until toothpick comes out clean. Cool completely. They then list a frosting to go with it... but this was just great on it's own... no need to add the extra calories. IMHO > Can't find my recipe!!! I must have deleted it by mistake, was going to make it for today. Could you PLEASE repost it? Pretty please with banana's and raisen's on top! > Thank's > Shirl Quote
Guest guest Posted April 11, 2004 Report Posted April 11, 2004 Here it is again... a copy/paste of the last one I sent out... hehehehehe For those that missed the first posting of this... it seems that the oatmeal banana combination of this cake is not only great tasting but has been doing wonders to balance the plumbing in folks.... Topper () Original recipe calls for 9 X 13 pan... I also made a batch as cupcakes, it made 21 (I didn't put in the raisins and nuts, with those it might make an even 2 dozen) Grease 9 X 13 baking pan or the muffin tins. Preheat oven to 350 Mix in large bowl with spoon: 1 1/2 cups mashed very ripe bananas (4 medium) 3/4 cup sugar 2/3 cup vegie oil (make sure not soy oil) 2/3 cup butter milk (can sub 1 tblsp wht vinegar plus regular milk to make 2/3 cup) 1 teaspoon vanilla 1 large egg Mix in: 1 1/3 cups flour 1 cup quick-cooking or regular oats (oatmeal) 2 tsp baking soda 1 1/2 teaspoons ground cinnamon 1 tsp baking powder 1/2 teaspoon ground cloves Optional to add (I didn't have these, so I skipped) 2/3 cups chopped nuts 2/3 cup raisins Pour batter in pan. Bake 30 to 35 minutes for 9 X 13, 18 to 20 minutes for cupcakes or until toothpick comes out clean. Cool completely. On Sun, 11 Apr 2004 14:50:42 -0600 " Shirley " writes: > Can't find my recipe!!! Guest guest Posted April 12, 2004 Report Posted April 12, 2004 It's not a bad effect... So far they've unplugged those that are constipated and slowed down those that are loose... For me.... it's made me every morning comfy regular... How to describe that.... Ummmmm.... Okay, get up in the morning and pretty much we all have to empty our bladders... Just a normal thing, Empty... then go on with your morning.... Well.... My bowels empty that regularly now.... No cramping, no straining... Just empty, get up... and go on with my day... Considering when I was at my hypo worst I was lucky to go once every ten days... It required a commitment of time to be in there... and it was a physical marathon akin to giving birth... I consider this a MAJOR improvement! That's not to say I wasn't vastly improved my getting my meds up to a good level....but this seems to have been that final tweak to make it better..... Still, I'd not have been talking about it here had it not been for the other two folks in this house hold proclaiming the same result. No.... we don't all sit around here talking about our bowel habits.... But it seems none of us had been doing as well as we'd liked... and when the subject came up with the opening line " did you notice anything different after eating that cake you made yesterday? " Well, I decided that it wasn't just me. AND when the extra bananas were purchased a couple of days later so that I could do the cupcakes.... AND when I went down to the freezer yesterday and the cupcakes were nearly gone... I see that I'm not the only one having one daily! hehehehehe Topper () On Sun, 11 Apr 2004 23:28:19 -0600 " Shirley " writes: > THANK YOU!!! Guest guest Posted April 13, 2004 Report Posted April 13, 2004 , You won't believe this... My doctor's office left a message on my machine this evening while I was out. " Dianne, please provide Dr. K with a copy of the recipe for the cake that you shared with the BBSCC senior group. He dislikes prescribing laxatives and that cake recipe is a good way to get some of our seniors and others with digestive problems to eat what is good for them in a form that tastes really good. " LOL! I will drop a copy off at the office in the morning when I pick up the mail. The message after that one was from my friend Bessie. " Dianne? Can you get me some more copies of that cake recipe? " Oh yeah! I guess it will be all over this area by tomorrow afternoon! Dianne Quote
