And when I can have potatoes again they are the first thing I'm making!! I make mine [have never bought them] the way Ray makes hers in her show 30 Minute Meals. they are easy! Ingredients 4 Shredded potatoes, skins off. [i do them skin on all the time to save time. And I use a food processor.] 1 large shredded carrot 1 medium onion [or half of onion] shredded 2 eggs cracker meal [i've done it with a GF flour mixture - about 1-2 Tbsp.] spices to taste she uses baking powder to make hers "puff up" but I like mine flatter like a hashbrown. I *believe* it's a scant tbsp. of baking powder. Her books are in most libraries - you can double check the proportions. Mix together and fry in about 1/2 - 1 inch of a light frying oil like vegatable oil or canola. I've even used olive oil - just watch the smoking point of olive oil. A few minutes on each side, only flip once and delicious pancakes await you. Most people eat them with sour cream but we love them with homemade applesauce. We can eat them breakfast lunch or dinner.
