In particular, it has a programmable setting so that you can tailor how long it mixes, rises, and bakes. This is really useful as most GF bread recipes do not require a second rising period like most non-GF recipes do. If you pick this machine, I'll send you the settings that we have programmed for Bette Hagman's "True Yeast Bread (Revised)" recipe (This is the recipe that we use most often). The reason?....we do not need the typical knead/rise/stir down cycles like regular bread. We need only one kneading cycle and one rise. If the bread machine advertises that its programmable, make sure it’s the right kind of programming. HELP!!! Bread Machine Help! Please!!! Guest guest Posted March 2, 2005 Report Share Posted March 2, 2005 Hello.. I did quite a bit of research before buying my Zojirushi BBCC X-20. It's highly recommended on a lot of celiac websites. I think it's great. The reasons I it are... The pan if horizontal making the bread have a 'regular' loaf look. There are two paddles. This allows the dough to mix and knead properly. I've not found the regular programs to be a problem. The controls are easy to use. I make bread in both my bread maker and the oven. Some turn out better one or the other. This takes some experimenting to learn. I have to admit, I love to cook. So, I haven't experienced the 'cost' problems that a lot have. The way I look a my celiac diet is one of eating whole foods.
