yogurt success finally ...

Hey all and of course, esp. Marjan-

I have had numerous " Failures " with my yogurt. All were done with

different nuts than almonds for phenol reasons. I used cashews many

many times and walnuts once. While all were somewhat successful

(they smelled/tasted like yogurt so I am hoping it had some

beneficial properties????) they were all very runny. After many

talks with Marjan about yogurt maker temp., straining, grinding, and

yogurt starter I believe I have come to the conclusion that it comes

down to the amount of fat in the nut. I made my first batch with

macademias this AM and its glorious. Perfect. Did NOTHING differnt

than with the other batches. Macademaias are a MUCH fattier nut

than the cashew/walnut. (This was somewthing Marjan mentioned to me

once) So I think this may be the reason for the runny yogurt. In

the future I may try adding some coconut oil to the cashew batch.

WHat do you all think? Alas, Thanks Marjan for all the help and

insight. Posted this in case any one else has had runny liquid-y

yogurt.
