I remember reading in a post from Elaine a while back not to worry

about the dextrose in salt. I believe she thinks it is not a great

enough amount to be concerned.

Sherrie,

is right. Elaine has said several times that regular Morton's

is just fine. I'm pretty sure it is what most of us use. In the

future, if you are concerned, you can look for sea salt that is

iodized. The iodized part is very important, according to Elaine.

Maybe someone has a suggestion on brand or source?

I thought Morton salt only contained salt and calcium silicate. Is this salt

not legal?

We use an iodized sea salt made by Cerulean Seas. I bought a whole

case of it online from haddon House Food Products in Medford, NJ.

If I recall correctly, I think I just did an online search for

Cerulean Seas.

It's great salt. Morton's may be safe. (We don't worry about it when

we're at other people's houses.) But I prefer to cook with iodized

sea salt at home.
