Guest guest Posted February 9, 2005 Report Posted February 9, 2005 , I have made my daughter's cornbread and it is easy to make GF. What I do is take a GF flour mix and replace the wheat flour. I have made a couple of recipes and have had good luck with them. I do add the Xantham Gum to it so it is not so crumbly. Quote
Guest guest Posted February 10, 2005 Report Posted February 10, 2005 Hello ... Another easy option is to just purchase a Gluten-Free Pantry cornbread mix...easy to use and quite good! I believe you can find a link directly to the GFP right from the SillyYaks site. I have made cornbread stuffing for my turkey twice now (I bake it in a casserole dish on the side) using the GFP mix as my base, and it is deeeelicious I don't think anyone here would even LET me switch back to regular non-GF bread anymore to make it! Take care...have fun experimenting...you'll soon find that it isn't so hard to live GF after all, once you get the hang of it C Quote
