I hit about three hundred web sites some months back researching the uses of wheat. I was a woman obsessed. I even found disposable silverware that was made from wheat starch! (It's GF, so don't panic.) I started my search because I was really interested in putting to rest, or confirming, for once and for all, the claim about gluten in envelopes. I will tell you that I absolutely had a violent reaction after licking a large envelope. Danna Korn confirmed that the leading envelope manufacturers don't use wheat starch. Which led me to this conclusion: maybe it isn't the glue at all, maybe there's enough gluten in the paper itself to make a very sensitive celiac such as myself sick...and licking a paper envelope was enough to do it. I guess I'll never know. But I do use a glue stick these days!

I did extensive research on envelope glue and contacted several leading envelope manufacturers, the adhesive association and the leading adhesive (glue) manufacturers who supply the US and other countries. They said there is no gluten in the envelope glue. It is made with tapioca and potato starch. I did find out, however, that paper has gluten in it, so I think when the glue is applied in a liquid form to the envelope flap, it enables enough gluten from the paper to mix into the glue to make us have a gluten reaction.
