Celeste,

I've attached three recipes for you that I have in my computer. One is

crockpot lasagna where you don't cook the noodles first, one is a white

chili and the last is sloppy joes. Melonie, at least one of these

recipes is already in the archives. I have a soup recipe mix from my

local support group I could send you that replaces canned soup in

crockpot or other recipes. You make it up as a powder and reconstitute

it before adding it to the dish. I have a number of other dishes where

I use this soup mix, but I haven't had a chance to put them in the

computer yet. It won't work if you can't eat dairy. Let me know if you

want the recipe. The other thing I do is use a versitile book like " Fix

and Forget " from Costco and adjust the recipes to be gluten free,

replacing soup mix with my powdered mix, using gf brands of ingredients

and gf pasta.

Thanks so much for the crock pot recipes. They sound delicious.

Could you please post the soup base mix recipe that you have? I have one, but would like to compare.

I made a really good pot roast yesterday. I put the roast in the crock pot and minced two cloves of garlic over it, then added about 4 Tbsp of DiJon Mustard. Add some salt and pepper (not much), and then turn on the crock pot. I prepared it the night before, and stored it in the fridge.

Today I have Manwhich and hamburger in the crock pot. We'll see how that goes, since I didn't cook the meat first. Chili is another excellent choice for the crock pot. I'm trying to prepare at least 3 crock pot meals a week, because our evenings are so hectic. Corned beef and cabbage is a good bet. Saurkraut and kielbasa is another favorite. All of these things can be prepared in advance, and then simply turn it on.

Hi Becki. When you put your crock pot liner in the fridge, do you let

it come to room temperature before putting it in the crock pot in the

morning? I worry that it would crack if it was cold, but I'm tempted to

do that to save time. You mention kielbasa in the crock pot...I wonder

if chicken sausage would work? I saw a recipe in Everyday Food for

chicken sausage and potatoes with rosemary. I bet that would work in

the crock pot, don't you think? I never have luck with regular chicken

in the crock pot though...it always gets too dry (yet tender as can

be).

I made shredded beef for tacos the other night (like the beef at

Chipotle) and it was so good. Here's the link:

I took my crock straight from the fridge to the pot. It worked fine. It seems that it heats so slowly that it isn't really a problem. I think that chicken sausages would work fine.

ANother chicken variation is to wash a lemon and then place it in the cavity of the chicken (up the butt!), and put that in the pot. Add some potatoes, onion, carrots, 4 cloves of garlic, and then sprinkle the chicken with rosemary. If you start it before you leave for work, it will be tender and moist as well. I also sometimes add frozen boneless, skinless chicken breasts and bbq sauce. THis is great over rice. We also sometimes slow cook a pork roast with no seasoning, and then shred it apart and add bbq sauce.

Hope these ideas are helpful! I'm obviously a big fan of the crock pot!
