I was watching Good Eats by Alton Brown on the Food Channel last

evening and he was talking about thickening sauces. His favorite

thickener is arrowroot, but not if you are cooking dairy. His next

favorite was cornstarch. He also mentioned tapioca starch. He mentioned

to always mix your thickener to a cold water type liquid before adding

it to a hot liquid. He gives great scientific explanation for why

things work the way they do in cooking. Wish he'd do a gluten free

episode.

Those are a few things I use to thicken things (without going

the "flour" route), and sometimes I will use any one of these with a

GF broth to make gravy.

I LOVE A.B.!! I think I'll send an e-mail asking for a gluten-free

episode from him. He is so into the science behind cooking, he'd

probably think it's a great challenge! He is fixated on GLUTEN in

many of his episodes about baking!

I am right there with you!! Last week I made his Stove-Top Mac & Cheese (using gf elbow mac, of course) & we LOVED it!! I will make it always!!

If you can find an email, or a way to contact him, please let me know & I'll jump on the band-wagon. I've been to his website & Food Ntwks' and I couldn't find any way to touch base with him, Alton, directly.

Keep us posted (no pun intended)-

I missed that episode. What did he put in the mac and cheese?

I went to foodnetwork.com and there is a link to send e-mail to Good

Eats. I posted a request there. Couldn't find anything else, but

I'm not giving up yet!
