His favorite thickener is arrowroot, but not if you are cooking dairy. His next favorite was cornstarch. He also mentioned tapioca starch. He mentioned to always mix your thickener to a cold water type liquid before adding it to a hot liquid. He gives great scientific explanation for why things work the way they do in cooking. I will make it always!! If you can find an email, or a way to contact him, please let me know & I'll jump on the band-wagon.
