Guest guest Posted May 15, 2006 Report Share Posted May 15, 2006 GARLIC GINGER MACKEREL Yield: 4 Servings Source: " Light and Easy Diabetes Cuisine " by Betty Marks Info: http://diabeticgourmet.com/book_archive/details/24.shtml INGREDIENTS - 1 pound mackerel fillets - 1/2 cup fresh lemon juice - 2 garlic cloves, minced - 2 green onions, chopped - 1 teaspoon chopped ginger root - 1 bay leaf - Lemon wedges - Parsley DIRECTIONS Rinse fish and pat dry. Cut into four pieces and place in a large non-stick skillet. Combine all remaining ingredients except lemon wedges and parsley and pour over fish. Cover and bring to a boil. Reduce heat and simmer 8 minutes or until fish is tender. Remove bay leaf before serving. Garnish each piece of fish with lemon wedge and parsley.
