PARTY TENDERLOIN

Yield: 8 servings

INGREDIENTS

- 2 pounds beef tenderloin, trimmed

- 1 teaspoon onion powder

- 1 teaspoon garlic powder

- 1/2 teaspoon black pepper

- 1/2 teaspoon salt

DIRECTIONS

Preheat the oven to 350 degrees F. Coat a large,

rimmed baking sheet with nonstick cooking spray and

place the tenderloin on the baking sheet.

In a small bowl, combine the remaining

ingredients and rub over the beef.

Cook for 35 to 40 minutes for medium-rare,

or until desired doneness beyond that.

Remove the beef to a cutting board and slice

across the grain into 3/4-inch slices.
