I usually substitute Brown Sugar Twin, but Splenda would work as well. I also throw in a handful of garlic cloves, some black peppercorns and a few sprigs of rosemary. Add whatever herbs you like. Some dried hot pepper is good too.

I just bring my chicken and pork in salted water – I never have used sugar and it seems to work fine.
