At my sister's restaurant one night she ran out of shredded mozarella.

So we started putting fresh mozarella on the pizza. Interesting but

definitely different from the usual. No one seemed to mind or at least

they didn't say anything directly to us.

I make mozzarella all the time from goat's milk. You can grate it if

you freeze it just a bit. Rather than store it in the fridge you might

consider the freezer. Use it for pizza and lasagna, you'll like it.

It might be possible. I would experiment. Cheese has mixed results. It is often too moist to crumble well and often gets globbed up.
