I'll be making a trip to get some local honey! Here is the recipe i needed it for- I have had a few requests. CHICKEN: 4 split chicken breasts (a 1 lb. package) 2 TB. Greek Seasoning (I got mine at Penzey's Spices- sooo good!) 2 TB. water 1 fresh lemon (or 2 TB. lemon juice) 1 TB. prepared dijon mustard 1 TB. honey 1/4 Cup vegetable oil SALAD: 1 head romaine/iceberg lettuce (about 1 lb.) 1 cup creamy salad dressing oil and vinegar dressings tend to make the wrap soggy) TO PREPARE: 1-2 TB. creamy peppercorn dressing 1 TB. Water 1/2 Cup sour cream 1/2 Cup light (low-fat) mayo 2 tsp. balsamic or wedwine vinegar 1 tsp. honey WRAPS: 6 large WW tortillas Bone and skin chicken or remove any bits of fat if you have purchaed boneless/skinless chx. Rinse in water and pat dry. In a bowl bi enough to hold the chicken, mix the Greek Seasoning with water, let stand a few minutes. Add lemon juice, mustard, honey and vegetable oil, whixk to combine. Add chicken, toss to coat, cover and refrigerate at least an hour. To grill the chicken, use medium heat, about 6 minutes perside. It takes about 15 minutres to get the coals going; wash, dry and thinly cut the lettuce at this time. Also prepare the dressing, but don't coat the lettuce until the chicken comes off the grill. To prepare the dressing, mis the Creamy Peppercorn in water, let stand 2 minutes. Add sour cream, mayo, vinegar and honey and whick to combine, Set aside. Once the chicken has cooked it should be set aside for 5-10 minutes before it is cut. Use this time to finish up the salad and dress the lettuce. Cut the chicken length-wise into long strips. Lay flat on tortilla, add lettuce and wrap. serves 4-6 Prep time 15 + Marinade cooking time 12 min I have received this recipe from Penzey's spices, nope, I do not work for them, but think they are awesome! I went into our local Penzeys for the first time last weekend and just wanted to buy everything! If they are in your town, I would reccommend them. Guest guest Posted June 29, 2004 Report Share Posted June 29, 2004 Hi Vicki, I use La Tortilla Factory Tortillas. They have two sizes, I use the smaller ones. Yes, I believe they are SB friendly. also- the peppercorn dressing, I believe it is Kraft (can't check now, I'm at work ). There is peppercorn and peppercorn ranch out there, you can probably choose whichever you'd like. I also go for the lower fat. Both of these ingredients I found in my local grocery store. ENJOY!
