Whipped cream can be <A HREF= " http://www.baking911.com/#MAKING WHIPPED CREAM WITH TIPS " >used as is</A> Homemade whipped cream is never as stiff as <A HREF= " http://www.baking911.com/#Q: What is Cool " >Cool Whip</A>, but it is so much more flavorful and its texture is light and fluffy. Heavy cream means cream labeled as " whipping cream, " " light whipping cream, " or " heavy cream " -- all with a butterfat content between 30% and 40%; the richer the cream, the better it will whip. " Light cream " (with only 20% butterfat) will whip, but it won't trap as much air or hold it very well, making it a bad choice. I like to use heavy or whipping cream that is NOT ultra-pasteurized (although that may be difficult to find) because it whips better, fluffier and holds its shape longer. Whipped cream is usually sweetened with <A HREF= " http://www.baking911.com/pantry_sweeteners.htm " >sugar</A> during beating. Table sugar is typically used, but I prefer Splenda. it dissolves faster eliminating the problem of sometimes getting gritty whipped cream. Does the sugar in the fat free make anybody dump?<<< , I haven't seen a sugar free Cool Whip, either. I don't think they make it. Just check the label to make sure which has less sugar, the regular, the reduced fat or the fat free. I'm not sure about Cool Whip, but most fat free versions of food are higher in sugar than the regular version. We bypass some of the fat but none of the sugar, so I usually choose what's lower in sugar. When adding Cool Whip to a shake, you use a small amount so it really doesn't add allot of sugar. And the people who add it only add like one spoonful, and not all of the time. If you don't like your protein drinks plain, then it's worth a try to get you to drink them.
