frozen yogurt

Does anyone have a good recipe for frozen yogurt?

Obviously it is not as simple as throwing yogurt in an ice cream

maker. This is essentially what I did, with a few egg yolks, some

maple syrup and vanilla. But it came out practically like ice. I

didn't see a recipe in NT or in any of my cook books. Not even my ice

cream recipe book!

Anyone got anything good?

I haven't made any frozen yogurt yet (just got my ice cream maker this

last weekend), but I looked on http://www.allrecipes.com and it looks

like you need to either add a bit of oil or alcohol to it. Maybe try it

with some coconut oil?

In re my ice cream maker, thought I'd post about it. I got this one:

would! I've made vanilla ice cream and peach ice cream so far, and both

turned out well. It doesn't make as much as most makers out there (only

about 1 qt), but it's enough for one night for my family. It says you

can do 2 batches before re-freezing, and technically you can, but the

second batch is very slow. The first batch takes 10-20 minutes. For

the peach ice cream last night, I had used a bunch of frozen peaches.

It froze VERY fast with that! LOL I checked it at 15 minutes and it

was rock solid. Anyway, it's entirely stainless steel, very

inexpensive, and has no moving parts, so it's quiet. I think I'd still

like to eventually get the attachment for my kitchenaid, but this one is

great for now, and we will be taking it camping with us too (we have a

camper, so have a freezer *BG*).

Here's the Cook's Illustrated recipe:

Vanilla Frozen Yogurt

Makes 1 generous quart

2 cups plain low-fat yogurt

2 teaspoons gelatin (unflavored)

1 3/4 cups whole milk

1 cup granulated sugar , minus 2 tablespoons

1 vanilla bean , 5-inch piece, slit lengthwise

1. Spoon yogurt into fine-mesh strainer set over glass measuring cup.

Place measuring cup in refrigerator; let drain until yogurt releases

1/2 cup liquid, 1 to 2 hours.

2. Sprinkle gelatin over 1/4 cup of the milk in a small bowl; let

stand, stirring frequently, until gelatin swells, about 10 minutes.

3. Meanwhile, heat remaining 1 1/2 cups milk, sugar, and vanilla bean

in small saucepan, stirring occasionally to dissolve sugar. Remove pan

from heat.

4. Add swelled gelatin to hot milk-sugar mixture, stirring until

completely dissolved. Scrape seeds from softened vanilla bean into

mixture, whisking seeds to evenly distribute; discard bean. Cool to

room temperature, then mix with drained yogurt.

5. Refrigerate yogurt mixture until it cools to at least 40 degrees.

Pour chilled gelatinous mixture into canister of ice cream machine;

churn until frozen. (Can be served as soft frozen yogurt at this

point, or can be stored in a sealed plastic container for 2 days

before it becomes icy.)

I have done it in reverse (frozen fruit,frozen coconut milk with the yogurt)It

was very yummy! I like your idea of freezing the yogurt,will try that

next....enjoy

The frozen yogurt cubes worked fine in my smoothie today. I added 2 cubes to my 2 cup drink. I think freezing yogurt is a great way to take advantage of sales and permits you to buy a larger container without fear of it going bad.
