Guest guest Posted January 17, 2001 Report Share Posted January 17, 2001 Well, I made it through the first two days in great shape, really great shape as I have lost 3 pounds in two days! Last night I made half of the cauliflower into fake mashed potatoes, and boy was that good. The portion control issue came into play with that one, as potatoes are my favorite food and this was yummy. I had probably a one cup serving of that, but wanted the entire pan. LOL I also had a pork chop and a few green beans. I was probably a little high on the carbs for induction, but I had over 100 oz of water and lost another 1.5 pounds this morning. Yeah, I am back under the 142 that I was when I headed to DC and ate oh so wrong. This morning I had 2 small slices of turkey breast and a half cup serving of the fake mashed potatoes. I just didn't want all the sodium from bacon again this morning. I am well into my first liter of water at work and plan to drink two liters again prior to leaving work today. We are going to eat at the Country Club today with one of our retired employees who is helping to train a replacement and that's where she wants to go. They have a great grilled chicken Caesar salad or chicken salad there, so that should be okay. Unfortunately, it comes with parmesan toast that is out of this world. I will see if I can get them to hold that or give it away, but that part will be today's mini-challenge. Last night I drank a little over another liter of water at home. The amazing thing was that I was so thirsty yet when I went to bed. It seems so ironic that drinking water seems to inspire the need for drinking even more water. How is everyone else doing? I stayed on course yesterday - I got extreme munchies last night that weren't soothed by a cup of tea, so I had a hard-boiled egg and a piece of cheddar cheese and that filled the gap. I was at 24 carbs yesterday (currently aiming for 20-30). I had 3 hard boiled eggs and 2 stalks of celery in the car for breakfast. I have almonds (3/4 oz. pkg.) packed for a snack and a lunch of 3 roasted chicken drumsticks, 1 cup of cauliflower and 1 oz. of cheddar cheese sliced up so that when I microwave the whole thing, the cauliflower should get cheesey. Over the past 2 days I've lost _5 lbs_..of course I'd gained 3.5 before that...but still ...I'm also back in ketosis as of last night (this morning my eyes were blurry and I couldn't see to cut my ketosis strip in half, so I didn't test)... the cauliflower thing sounds wonderful..I think I might try making that for my husband and I tonight...I gave him a piece of atkins roll last night with butter on it and he thought they were pretty good! I am going to make them next time with a bunch of fresh herbs (rosemary and dill..yes I know..count the carbs)...he's STARTING to get interested in all the low-carb stuff I'm doing...and actually whipped the egg whites for me last night (which I hate doing and he likes...he also whipped cream for my birthday cheesecake)...I am so crossing my paws that he will come over to this WOE...though I won't tell him about this group because then I can't bitch about him :) (and you guys are the ONLY people I ever bitch about my husband to)... Menu for today: Breakfast: multi and sunflower seeds lunch: 2 atkins rolls with margarine (bad trans fats but I was in too much of a rush to soften real butter and the rolls are kinda fragile)...and 4oz cucumber slices marinated in rice vinegar and fresh ground pepper. Dinner: hamburger patty with 1oz cheddar cheese (waah, I broke the no-dairy thing last night...I think I will have to hold off till I stall again or something)...1/4 cup canned mushrooms..and fauxtatoes. Snack: carbolite nugget and maybe 3 slices of bacon if I get nibbly.. I never would have guessed that an egg and cheddar cheese could cure the munchies though. When I have the munchies it has to be something crunchy. At those times I go for raw veggies or pepperoni chips. Since I am really not a pepperoni lover it is more often the raw veggies, or sometimes peanuts, but those can get out of hand really easily. I think you are lucky that you like eggs as well as you do. Atkins rolls and the occasional deviled eggs are the extent of my egg eating now that cookies, bars, pastries, etc. are out. LOL I have just never liked eggs as eggs. Your cheesy cauliflower sounds like it will be good. It seems like us old timers that are getting strict again are doing okay for ourselves. Have a good day and take another drink of water. At the rate I am going, I may be on my second liter prior to lunch. I may need to start bringing more with me to work! I did that too, but the important thing is that after we have done something so foolish or uncontrollable (take your pick) we know how to get it back off. I was slowly (maybe not so slowly actually) sliding back up in weight. Worse still, my clothes were fitting tight. I was able to get strict again and am on the way back down. I hope your husband does join you, I'm sure that will make things easier. My sister, the one I lunch with every day joined me for two weeks once and she lost 10 pounds, but she is such a picky eater that she didn't have enough variety to stick with it. She is trying the WW way and has gained and lost, gained and lost. It makes it kind of difficult for lunch hours, that's why it is so challenging for me. Our small town has fewer restaurant choices than many towns that are even smaller. There are very few that have good options for both low fat and low carb. That is why I make getting through that meal a challenge to myself. The others still have bad option choices, but since I live alone and eat most of the others at home, I can control them. Sadly today there is no weight loss to report, but I did stay legal and I drank over 100 oz. of water again yesterday. My goal was 64-72, so that is going well. Today is the dreaded day 4. The one I never seem to be able to get through without cheating. I fixed 3 slices of bacon this morning, finished two and couldn't eat any more, so the appetite suppression seems to be back in force. That should help. Last night I had chicken wings and fauxpotatoes for dinner. I just hope the weight loss continues.
