hi heather. i am low carbing. i eat roast beef, onions, mushrooms, pork,

sauerkraut, and strawberries like they were the only things out there. and

cashews. no breads, potatoes, rice or anything white. but i do drink a

beer or daiquiri on occasion. that needs to stop i think. pat

Awesome... :) psst don't forget green things... broccoli, lettuce,

asparagus, cabbage, brussel sprouts, green beans etc.

A beer has ~ 13 carbs per 12 oz...

if you can find sugar/carb free daiquiri mix, the alcohol in one is whiskey

right? whiskey is only a trace carbs as is vodka, and gin etc.

however for me, if i have some alcohol, then its like my resistance to say no

to the other carbs is lower plus i crave them.

Here's a list of veggies, all of which are pretty low carb, that we can eat

without much problem:

spinach

cauliflower

broccoli

brussel sprouts

summer squash

spaghetti squash

mushrooms

asparagus

greenbeans

cabbage

sauerkraut

bok choy

lettuce

avocado (really a fruit, smile)...

....and I may have forgot a few. Vicki

actually, i forgot green beans and broccoli. i just ran out, but it's on my

list, and i do eat those. i don't like " greens " , so i pass on those. i

love beets, carrots, tomatoes, and i think i recall those are off, but since

my county raises the best tomatoes in the world, i add those. also squash,

zukes, cukes and eggplant. i'm guessing those are ok.

the daiquiri is called 'i'm bananas over you' and it comes already mixed.

it's like a banana milkshake, only with rum i think. the base is heavy

cream, and i have a small little glass some nites when i'm feeling stressed.

once every few weeks, i go with the brother the SIL to a brew pub, and then i

do bad things. i get a hamburger (trash the top of the bread on occasion);

fries and two beeers. no dessert.

i now have cheesecake squares in the fridge, and when i feel i'm gonna scream

if i don't have something sweet, i eat one. i also have chocolate chips, and

that helps, but those are going out today.

i'm trying to find something sweet and i made notes before so i'm going back

for the notes to get candy bars or whatever for that craving.

but i think the loneliness now is not helping, and i tend to need comfort

food more than before, and i'm trying to figure out a good one. pat

The Ross dark chocolate lowcarb candy bars are really delicious...but they

may raise your BGs a little. ( " hidden carbs " ). If you can get the Walden low

carb chocolate syrup, (available online) a little of that in some ricotta

cheese makes a really yummy dessert and satisfies my chocolate need. Vicki

Try to figure out something besides food that comforts you and keeps you away

from the kitchen. For me, getting involved in a quilting project works.

sounds good. i'm gonna try to find them and see what happens. i find when

i'm working on here, i NEED a munchie. i'm trying to decide if there is a

" dip " that i could dunk in some broccoli, green peppers or something and it

would be ok.

i tend to be into munching now, and i was eating rice cakes because they have

no calories, then i realized they were RICE.

i'm trying to come up with stuff. just still grumbling again. lol pat

ok, sounds good, roger. i was thinking of mixing up sour cream, mayo and

some herbs, but i have not read the labels. i'm guessing once i do, i will

go for something else. i'm craving eggplant, and thinking i may figure out

how to roast them here, and make a sandwich of that, with some tuna or

something. pat

I think hummus wouldn't be TOO carby and it works nicely as a dip...best to

eat and test...it's made from garbanzo beans, tahini (sesame seeds) and olive

oil. Also...mayonnaise isn't carby; you could add some lemon juice and use

that for a dip...oh yes, guacamole of course; avocados aren't hardly carby at

all. You can make your own guacamole with very ripe avocado, lemon juice,

and some mayo (NOT Miracle Whip). If you add tomatos and onions that'll make

it carbier. Vicki

Slice eggplant and salt slices, let 'em sit for about ten minutes...pat

dry...brush with olive oil and bake till desired doneness. Then you could

use this as " bread " with something in between...a soft cheese would be be

good.

There's a new Whole Foods market that just opened in Portland that has all

kinds of cheeses I've never tasted. I'm trying them one by one...just found a

WONDERFUL, full flavored soft cheese (sorta like brie) called taleggio

ciresa...one small slice on top of two slices of deli roast beef, nuked for

about 30 seconds and rolled up is Really Yummy. Vicki
