Guest guest Posted May 19, 2004 Report Share Posted May 19, 2004 Any ideas for a great veggie salad or dish? I likecauliflower, broccoli, peas, cucumbers, peppers... Not a fan of brussel sprouts and asapargus, that kindof stuff. ****************** Very simple cucumber salad that I've loved since I was a kid. Stir together equal amounts of water and white vinegar and add sweetener to taste. (the original recipe calls for equal amounts of water, vinegar and sugar, but I never used that much sugar). Pour over sliced cucumbers, onions and pepper strips (I use red pepper because it looks pretty ) Refrigerate overnight for best flavor. *************************** Broccoli salad 2 bunches broccoli, cup up in small pieces One cup of each of the following: Shredded cheese (lf) sunflower seeds onions (chopped fine) celery (chopped fine) bacon bits (I use real turkey bacon fried crisp and crumbled) grapes - cut in half Dressing - 1 C mayo, 1/2 to 3/4 C Splenda (to taste), 2 TBLS vinegar. I'd like to give them another try since my sister keeps telling me how yummy they are. And cabbage... love it. Hated it before. But I'm in the market for new ways to make it, combine it with other foods, whatever. Thanks! Cheryl *************************** Have you tried sauted veggies?? I do broccoli, zucchini, brussels sprouts and cabbage this way. I add garlic, peppers, sometimes onions and whatever else I feel like at the time. It gives the veggies a whole different flavor. One of our favorite (and easiest) meals is steamed cabbage and turkey kielbasa. But you reminded me of a veggie I'm not fond of: brussel sprouts. If anyone has a good way of cooking these, please share.
