Coconut isn't allowed in Ph 1 (unless it's been included on some recent update! LOL) Good luck to you! Just starting... hello! Hi everyone,Thought I'd introduce myself. I'm a 43yo mother of three, married to dh for 25 years. Started weight watchers last year and lost part of my weight, 20 lbs, but have been at a plateau (as they call it) for over 8 months now. I'm hovering around 165, and want to get down to 140 and hope this works to jumpstart the weightloss again.I started yesterday and didn't get too hungry, thankfully! I had eggs & asparagus for breakfast, a lowfat mozzarella stick for snack, tuna bean salad on watercress for lunch, 30 pistachios for snack and chicken coconut curry with large salad for supper (with Newman's Parmesan salad dressing, hope that's allowed in Phase 1?) Also had the vanilla creme using Splenda, which tasted ok, surprisingly (I'd expected it to taste gross... :)Glad to have found this group and that it's so active. I'm on day three, and am a bit tired, but otherwise doing fine... The coconut was actually lite coconut milk in a Phase 1 recipe in " The South Beach Diet Cookbook " . It was " Coconut Chicken " on p. 204, and it was *delicious*! I put some curry in the recipe instead of tamarind paste (because I couldn't find it) and the curry didn't have any sweetener in it, so I figured that was ok. I was doing pretty good with ww until I hit that " plateau " . I figure ww was good for things like watching portion sizes and paying attention to how much I was *actually* eating, but now I need to pay attention to *what* I'm eating, as well as how much...
