Watch the sugar content in Balsamic vinegar. I also buy Sesame Oil (cheap at restaurant supply or oriental food store) and mix half & half with EVOO. Then when you shake up your dressing, it stays mixed because of the natural lecithin in the sesame oil. Sesame oil is also one of the best oils out there for you, but does not get mentioned very often. Get 'toasted' sesame oil and you'll get a really nice nutty sweet accent to your dressings.

The reason dressings stay mixed is because lecithin is a fat/oil emulsifier. It is also great brain food.

My favorite salad dressing

I just had to share my favorite salad dressing with ya'll (yes I'm from the South). It's Good Seasons Italian dressing mix with Balsamic vinegar and of course, EVOO (extra virgin olive oil). It's addictive and less than 1 g of sugar, so I can have it (I've got reactive hypoglycemia) plus you have the healthy evoo, and good herbs in it. Everyone I make it for just loves it. Check it out the next time you're in the store and I promise, you won't want to go back to bottled salad dressings again! I can't even find a bottled dressing that I can handle the taste of, and we won't even talk about fat-free dressings....of course they're not SBD friendly anyway, but nasty on top of that!
