Hi Jill, can you tell me what brand of bread maker do

you have and where did you buy it?

I got one some time ago and it just would not work

well for gf bread.

I have a Zojirushi bread machine. It makes a horizontal loaf and has two

paddles. It has a programmable " home made " feature that you need for gf

bread. Gf bread only needs one rise and one mix cycle. I bought mine at

www.costco.com and love it. There are numerous sites online where you can

order the Zojirushi. The bread I make stays soft on the counter for two to

three days before I freeze it. Melonie posted the recipe for Irene's

Sorghum bread that I make regularly in my Zojirushi.

In addition, I order Kinnikinnick Italian Tapioca bread by the case from

Vitamin Cottage (local health food store) to use in between bread baking.

Check with your local health food store to see if their distributors carry

Kinnikinnick, probably under frozen baked goods. Even if the store doesn't

carry the bread, you can order cases from the distributor. The case lot is

very small, only 4 loaves.

There is also a gf bakery in Colorado Springs, Colorado called Outside the

Breadbox that makes awesome baked goods. Since I bake my own bread, I have

never tried their bread. There are numerous stores in/near Colorado springs

and a Water To Go store in Castle Pines that orders from this bakery on a

weekly basis. The last time I ordered from them I got individual apple and

cherry pies, graham crackers (can you say " somemores " ), chocolate chip

cookies and rolls. Their website is www.outsidethebreadbox.com if you are

local to Denver or Colorado Springs.

Hi Lora!

I have a Zojirushi (Model BBCC-V20) that I

purchased new two years ago. I purchased it from a kitchen store, but you can

probably find it online or in your local kitchen store.

I LOVE my Zojirushi because it makes a

rectangular loaf…its easy to cut and better for making sandwiches (some

machines make a round loaf). I also love that its programmable….GF bread

does not need multiple kneading and “stir down” modes like regular

bread….a programmable machine is a must for GF bread baking.

For Betty’s Four Flour Bread, I use

the “homemade” programmable setting. I find that I get the best

results when I make a 1.5 lb loaf (1 lb loaf is too small…the 2lb doesn’t

cook all the way through….the 1.5 lb loaf is nearly to the top of the pan

anyway). Here are the settings I use….

Preheat 15mins

Knead 25mins

Rise 1 off

Rise 2 off

Rise 3 1hr for regular

yeast, 35mins for quick rise yeast (I use quick rise)

Bake 1hr 10mins

It took me a few tries to get the dough

consistency right. If you purchase the Zojirushi and need help with dough

consistency, email me outside of the group and I can send you pictures of my

dough…it will give you a better idea of what you’re looking for.
