I attended a talk by a dietitian at the No Va Conference a month ago and a she said you can take any recipe and substitute bean flour for regular flour ( 1 to 1) and it will turn out great. She said it works best if you make chocolate or applesauce type cookies or muffins or cakes as you won't taste the bean nutty flavor when something else takes over the flavor. A plain vanilla might tase like the bean flour alittle. My granddaughter likes to bake cookies and she uses the Mrs. Fields cookie recipe and substitutes either gluten free pantry flour or Mr Ritts flour and makes very good chocolate chip cookies. I want to try the bean flour (garabanzo bean flour) and see how it turns out. She said you can make brownies or anything that calls for flour and just use the bean flour instead - same amount.

One of my biggest cravings are cookie, not all of the time but when

my mom cooks them at home, the smell gets me really hungry for a

Nestle's chocolate chip cookie. That infact is my only gluten-filled

down fall.

I do want to ask about extracts though. If an ingredient is listed

as " barley malt extract " is it taboo? I could also use some

suggestions on healthy snacks.

(I am getting more information here than I have gotten in the past

year and a half.THANK YOU!)

Don't eat barley or barley malt extract or malt extract or malt flavoring.

I know you can find lots of GF recipes for chocolate chip cookies. I would

like some too, but I dare not make cookies because I would eat them all in a

day! Cookies are my downfall! Ann
