I know that you have a small child and I was wondering if you would list some of her favorite foods that you make or buy. My little guy just turned two and he is getting very picky. I just want some ideas that I may be missing. He loves mashed potatoes, waffles, pancakes, veges., beans and weiners, and fruit. I have a hard time finding a protein that he will eat (I am holding off on peanut butter because I don't want to deal with a peanut allergy) You did list some chicken from banquet but I'm not sure where to find it. They are chicken nuggets shaped like dinos and you can order them through www.wellshirefarms.com .They are $3.65 for a 10 oz package (about 18-20 pieces) or $60.? for 20 packs. I haven't found anything like these in any of the stores we have looked at except for a store close to where they are made. Guest guest Posted June 14, 2004 Report Share Posted June 14, 2004 Sharla- Just my 2-cents....I have 1 celiac & 2 peanut allergies in my house (they actually have genders & names too!) ranging from 18 mos to 7 yrs. Besides the "quick & easy" stuff (Amy's has a gf veggie lasagna too!) I cook from scratch most of the time - yes, I work out of the home too, so it's not real complicated fare. Big hits at our house are quesadillas, which I use refried black beans (lots of protein/low fat) & cheese in two corn tortillas most of the time. I spray the outsides of the tortillas with a little olive oil & bake them on a cookie sheet (turning them about 1/2 way through) because it allows me to make 6 quesadillas at one time & get our "sides" ready too. Last week I mixed shredded chicken, chopped spinach (frozen, thawed & drained) & mushrooms all together & spooned that onto the beans & covered that with the cheese before putting the top on. I serve the kids "dips" for the quesadilla, which is fun & they love - sour cream, guacamole(an extra veggie), etc.- and I make spanish rice, slice a mango/peaches/etc. or whatever we've got that's quick, as side dishes. I find the quesadillas a great place to "sneak in" extra veggies, which I also do with omelets. It's the only way I get broccoli into my 7 yo. I also add things to our pasta sauce (which is from a jar) like chopped spinach, zucchini, yellow squash, ground turkey, etc. I find the kids just think it's extra chunky stuff in the sauce, but don't really ask specifically what it is, most of the time. We also grill more in the summer, so shrimp on skewers are fun (as long as nobody uses them as weapons) especially with chunks of pineapple, or other fruits/veggies. I haven't given the baby any shellfish yet, but tuna-melts work well too. I just make gf tuna salad (canned tuna is the safest anyway & again pretty good protein) & toast a 1/2 of gf english muffin, scoop on tuna & melt cheese over the top. Again, multiple "melts" can be done in the oven all at once & we serve tater tots, cottage cheese, etc. as "sides". I hope these ideas help you, even if it's just to think how you can add to things you're already making. (Also, I'm at work & trying to do work & write at the same time, so none of it may make any sense!) Picky eating was like a job to my 7 yo before his celiac dx, but as he felt better his willingness to try new things grew. That comes with age too, but to those of you with picky eaters, please remember to keep exposing them to new things because (a) one day they'll surprise you, and ( if you don't, the problem can get worse instead of better with age.
