I really feel good about what I am eating, too. last night I was late coming home for dinner (I live in Iowa and we are caucusing--lots of presidential hopefuls are coming to town to speak and I am going to them all). I made cheese omelets for my husband and son. I used no fat cheddar in mine and fresh mushrooms. I had 1 whole wheat piece of toast and some v8. It was tasty and filling. I don't have time in the morning to cook eggs, so this was a treat for them too. I'm a teacher, so snacking is impossible. But I am bringing salads, veggies and hummus, no fat no sugar puddings, jellos, diet rite soda or water. String cheese. I found some health food whole wheat crackers, no trans fats. This is becoming a life style. My only challenge will be today's lunch. It is semester end so we are being treated to Fazoli's spaghetti, breadsticks, cookies and ice cream. I spent over an hour in the grocery store last night with my list from the book trying to find things to stock my fridge and cabinets so that I will have all the right choices. I came home with lots of veggies and other allowable goodies. I couldn't find the fat-free/sugar free yogurt. They had all kinds, but not w/out the sugar. Keep up the great work!
