DJ! That is terrific!! woooohoooo... what post is the baked ricotta

cheesecake?

oops, I think I got that off another list, here it is:

DJ

1 lb. container part-skim ricotta cheese> 1 egg> 1 tsp. vanilla extract> 8 packets Splenda> handful of slivered almonds (optional)> I Can't Believe It's Not Butter spray (to grease pan)>> Mix the first four ingredients in a bowl until fully incorporated. > Spray pan with cooking spray and pour mixture in. Add almonds on> top of mixture (optional) and bake 45-60 minutes at 350 degrees.>> This is wonderful warm (allow to sit for at least an hour after> removing from oven) or chilled.
