Guest guest Posted July 29, 2000 Report Share Posted July 29, 2000 4 medium zucchini (2 lb.) pepper to taste 1/2 cup grated parmesan cheese 2 Tablespoons unsalted butter, melted Preheat oven to 400°F. Butter a 9-12 " casserole dish or 10 " pie plate. Bring a large pot of water to boil for the zucchini. Wash and trim ends of zucchini and slice in 1/4 " thick rounds. You should have about 8 cups. Add to the boiling water, cover and cook two minutes. Drain and rinse under cold water to refresh. Arrange zucchini in overlapping pattern in dish or pan. Season with pepper and sprinkle with cheese. Bake, uncovered, 30 minutes or until zucchini are tender. Increase oven temperature to 475°F and bake approximately 10 additional minutes, or until top is golden brown.
