The best substitute for spaghetti I've found--thanks to chef Marilyn!--is to take a peeler and peel zuchinni into strips (stopping when you get to the seedy part) then bake them at a low heat, I do 250, in oil or butter or whatever topping you like, till they're warm and only mildly crunchy. I think this works because it's not too crunchy and the zuchinni has such a mild flavor unlike the spaghetti squash. Giving up pasta was the only thing I missed when I went SCD, this has been a great substitute and now I no longer miss pasta! Marisol FWIW, I tried the spaghetti squash as a " substitute " . Even with lots of butter, it's spaghetti squash in name only.
